Is there a way to record, for each user created, some personal data (name, surname, document id...)?

There is no UI for doing that. You can, however, store the information in another column of the user table (e.g. you can "borrow" signup01 - signup10 column to store it, refer to chapter 5 of firstspot_guide.pdf).

Note that you can use SQL to create username in table fsusr. Refer http://patronsoft.com/forum/viewtopic.php?t=1514 for a guideline.
