We need a verification on our thinking. We are an existing wireless ISP planning to add hotspots on the same network and want to avoid conflicts. Is our assumption correct that we can continue using our own dhcp server and network subnets for our WISP customers, then add FS with dhcp turned off, with a new network segment (subnet)? Old clients will still work as before, and FS will process hotspot clients accordingly, correct? Would we tell our dhcp server to assign unauthenticated mac addresses to the FS network segment.

Yes, this will work.

FirstSpot DHCP server is optional. Note that you need to make sure your DHCP server assign the IP setting correctly. (e.g. Default Gateway needs to be FirstSpot Private Network Interface IP)
